According to historical records and folk legends, when Emperor Taizong Li Shimin led his army through Tongguan on a campaign, local villagers offered hand-made Crispy Pancakes stuffed with braised pork. Praised for its crispy exterior, tender interior, and non-greasy taste, it gradually spread along military and post roads, becoming a staple for travelers and soldiers.
Its inheritance has never been interrupted for thousands of years. In the Tang Dynasty, it was a convenient treat for merchants; in the Song and Yuan dynasties, it entered the streets and became a favorite daily snack. Since the Ming and Qing dynasties, its production techniques have been refined, with "secret recipes" passed down orally from master to apprentice.
Despite the changes of time, the core craftsmanship of Tongguan roujiamo remains unchanged. The old rules—selecting high-quality wheat flour, proofing dough at a controlled temperature, adjusting shortbread properly, and braising pork over low heat—are strictly followed by inheritors to ensure its original flavor.
